These keto lettuce cups are loaded with tuna and scallions in a zesty sesame dressing and topped with aromatic fresh cilantro.

These make a great lunch option or snack.

Ingredients

  • 4 inner (small) leaf romaine lettuce
  • 4 ounce tuna fish
  • 1 teaspoon tahini
  • 1 teaspoon lime juice, fresh
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • 1 medium – 4 1/8" long scallions
  • 1 teaspoon water
  • 1 teaspoon, whole pieces sesame seeds
  • 1 teaspoon, chopped cilantro
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the sesame seeds to a dry skillet over a low heat. Toast gently for 2-3 minutes until golden.
  2. Add the tahini, lime juice, sesame oil, olive oil, water, salt and pepper to a mixing bowl. Whisk together until smooth.
  3. Thinly slice the scallion and add to a bowl along with the tuna. Mix together until well combined and the tuna is evenly coated in the dressing.
  4. Divide the tuna mixture evenly between the lettuce cups and scatter with the sesame seeds and fresh cilantro to serve.
