These keto lettuce cups are loaded with tuna and scallions in a zesty sesame dressing and topped with aromatic fresh cilantro.
These make a great lunch option or snack.
Ingredients
- 4 inner (small) leaf romaine lettuce
- 4 ounce tuna fish
- 1 teaspoon tahini
- 1 teaspoon lime juice, fresh
- 1 teaspoon sesame oil
- 1 teaspoon olive oil
- 1 medium – 4 1/8" long scallions
- 1 teaspoon water
- 1 teaspoon, whole pieces sesame seeds
- 1 teaspoon, chopped cilantro
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the sesame seeds to a dry skillet over a low heat. Toast gently for 2-3 minutes until golden.
- Add the tahini, lime juice, sesame oil, olive oil, water, salt and pepper to a mixing bowl. Whisk together until smooth.
- Thinly slice the scallion and add to a bowl along with the tuna. Mix together until well combined and the tuna is evenly coated in the dressing.
- Divide the tuna mixture evenly between the lettuce cups and scatter with the sesame seeds and fresh cilantro to serve.
