Toss out the pizza crust, but keep all the delicious toppings and cheese! A large zucchini is stuffed with supreme pizza toppings like marinara sauce, black olives, pepperoni, and plenty of mozzarella cheese. Make this recipe for a simple lunch or double up the recipe for meal prepping!

Ingredients

  • 5 ounce zucchini, raw
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon oregano, dried
  • â…“ cup marinara or spaghetti sauce commercially prepared
  • ½ ounce pepperoni
  • ¾ ounce pitted kalamata olives by mezzetta
  • ¼ cup, shredded mozzarella cheese, whole milk

Instructions

  1. Preheat an oven to 375 degrees and spray a glass baking dish with pan spray. Prepare a large zucchini (starting weight about 8 oz) by slicing it in half lengthwise. Use a spoon, scoop, or coring tool to scoop out most of the inside of the zucchini and discard it, leaving you with mostly-hollow zucchini halves. Your final zucchini weight should be what is listed in the ingredients.
  2. Place the 2 zucchini halves in your baking dish. Drizzle the olive oil over each piece, then sprinkle the salt, pepper, and oregano over the zucchini.
  3. In a bowl, mix together the marinara sauce, chopped pepperoni, and chopped black olives.
  4. Fill each zucchini half with the pizza mixture. Then, sprinkle the mozzarella cheese over the top of each half.
  5. Bake the dish for about 25 minutes. Enjoy your supreme pizza zucchini boat hot!
