Toss out the pizza crust, but keep all the delicious toppings and cheese! A large zucchini is stuffed with supreme pizza toppings like marinara sauce, black olives, pepperoni, and plenty of mozzarella cheese. Make this recipe for a simple lunch or double up the recipe for meal prepping!
Ingredients
- 5 ounce zucchini, raw
- 1 teaspoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper, ground
- ½ teaspoon oregano, dried
- â…“ cup marinara or spaghetti sauce commercially prepared
- ½ ounce pepperoni
- ¾ ounce pitted kalamata olives by mezzetta
- ¼ cup, shredded mozzarella cheese, whole milk
Instructions
- Preheat an oven to 375 degrees and spray a glass baking dish with pan spray. Prepare a large zucchini (starting weight about 8 oz) by slicing it in half lengthwise. Use a spoon, scoop, or coring tool to scoop out most of the inside of the zucchini and discard it, leaving you with mostly-hollow zucchini halves. Your final zucchini weight should be what is listed in the ingredients.
- Place the 2 zucchini halves in your baking dish. Drizzle the olive oil over each piece, then sprinkle the salt, pepper, and oregano over the zucchini.
- In a bowl, mix together the marinara sauce, chopped pepperoni, and chopped black olives.
- Fill each zucchini half with the pizza mixture. Then, sprinkle the mozzarella cheese over the top of each half.
- Bake the dish for about 25 minutes. Enjoy your supreme pizza zucchini boat hot!
