This sweet and crunchy salad is packed with nutrient dense broccoli, crisp bacon, toasted almonds and drizzled with a sweet and zesty dressing.
This is a great light lunch option for two or a side salad.
Ingredients
- 4 slice – 6" long bacon
- 2 cup flowerets broccoli florets raw
- 2 tablespoon olive oil
- 1 tablespoon, sliced almonds, raw
- 1 tablespoon maple flavored syrup by lakanto
- ½ tablespoon lemon juice
- ¼ medium – 2 1/2" diameter red onion
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat a tablespoon of olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden.
- Whilst the bacon is cooking, roughly chop the broccoli florets into small bite sized pieces and thinly slice the onion. Add to a serving bowl.
- Once the bacon is cooked, set aside and add the flaked almonds to the skillet. Cook in the bacon grease for 2-3 minutes until golden.
- Roughly chop the bacon and scatter over the salad.
- Scatter the flaked almonds over the top.
- Whisk together the oil, syrup, lemon juice, salt and pepper and drizzle over the salad to serve.
