This sweet and crunchy salad is packed with nutrient dense broccoli, crisp bacon, toasted almonds and drizzled with a sweet and zesty dressing.

This is a great light lunch option for two or a side salad.

Ingredients

  • 4 slice – 6" long bacon
  • 2 cup flowerets broccoli florets raw
  • 2 tablespoon olive oil
  • 1 tablespoon, sliced almonds, raw
  • 1 tablespoon maple flavored syrup by lakanto
  • ½ tablespoon lemon juice
  • ¼ medium – 2 1/2" diameter red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden.
  2. Whilst the bacon is cooking, roughly chop the broccoli florets into small bite sized pieces and thinly slice the onion. Add to a serving bowl.
  3. Once the bacon is cooked, set aside and add the flaked almonds to the skillet. Cook in the bacon grease for 2-3 minutes until golden.
  4. Roughly chop the bacon and scatter over the salad.
  5. Scatter the flaked almonds over the top.
  6. Whisk together the oil, syrup, lemon juice, salt and pepper and drizzle over the salad to serve.
