Everything you love about about meatball parm subs is included in this healthy recipe made with zucchini “subs” and lean turkey meatballs. Classic Italian spices are paired with hot marinara sauce and melted cheese on top.

Ingredients

  • 20 ounce ground turkey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ teaspoon onion powder
  • ½ teaspoon oregano, dried
  • ¼ teaspoon basil, dried
  • 1 teaspoon parsley, dried
  • 1 tablespoon mayonnaise, store bought
  • 14 ounce zucchini
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • 4 tablespoon marinara or spaghetti sauce commercially prepared
  • 4 tablespoon, grated parmesan cheese

Instructions

  1. Preheat an oven to 375 degrees. In a large mixing bowl, mix together the ground turkey, salt, pepper, onion powder, oregano, basil, parsley, and mayo.
  2. Form the mixture into approx. 16 meatballs and place on a well seasoned sheet tray or a tray lined with parchment paper. Bake the tray for 30 min, no rotating.
  3. Set the meatballs aside to cool. Prepare 2 medium zucchinis by slicing away the ends and slicing each one in half lengthwise. Use a spoon to scoop out the centers, leaving hollow space to serve as the “sub” part of this recipe. Sprinkle the insides with salt and pepper.
  4. Spread about 1 TB of marinara sauce across the hollow portion of each zucchini halve. Set the zucchini halves on a sheet tray and bake for 8 minutes. Then, pull the zucchini out of the oven, arrange 4 meatballs in each zucchini halve, and sprinkle about 1 TB parmesan cheese across each row of meatballs.
  5. Bake the tray for an additional 6 minutes to reheat the meatballs and melt the cheese.
