Need an idea for meal planning this week? These turkey taco bowls can be prepared in under 20 minutes! This recipe makes enough for 3 taco bowl. You can keep your meals interesting by including a second lunch recipe, or you can double this recipe to have turkey taco bowls all week.

Ingredients

  • 1 teaspoon olive oil
  • 10 ounce ground turkey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon onion powder
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon cayenne
  • 1 ½ cup, cut pieces cauliflower rice
  • 4 ½ ounce avocado
  • 3 teaspoon, chopped cilantro
  • 9 tablespoon, shredded cheddar cheese

Instructions

  1. In a large skillet, heat the olive oil on high heat. Toss in the ground turkey, salt, pepper, cumin, cayenne, and onion powder.
  2. Cook the turkey until it’s fully cooked and seasoned – about 8 minutes.
  3. Distribute the cooked turkey into 3 meal prep containers. Discard any excess liquid in the pan, and then return it to the stove on medium heat. Toss the cauliflower rice into the hot skillet, and let the rice get slightly browned and toasted.
  4. Once done, transfer the cauliflower rice to the 3 meal prep containers as well. Each container should get about ½-cup of rice. Evenly distribute slices of avocado, chopped cilantro, and shredded cheddar as well.
  5. Enjoy your taco bowl lunches throughout the week!
