These tender cauliflower steaks are loaded with low carb pizza toppings of sweet sundried tomato, crisp red onion and tangy goats cheese.

These make for a great lunch option with a crisp green salad and sliced avocado.

Ingredients

  • 4 medium black olives
  • 3 piece sundried tomatoes packed in oil drained
  • 2 tablespoon tomato sauce
  • 1 ounce goat cheese, soft
  • ½ teaspoon oregano, dried
  • ½ tablespoon basil, fresh
  • ½ tablespoon olive oil
  • ⅓ medium – head – 5" to 6" diameter cauliflower
  • ¼ medium – 2 1/2" diameter red onion
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cauliflower into two even steaks, a half inch thick. Add the cauliflower to a pan of boiling water and simmer until the steaks are tender. Drain the water and pat dry.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. Divide the passata evenly between the two cauliflower steaks.
  4. Crumble the goats cheese over the two steaks and sprinkle over the dried oregano.
  5. Finely slice the sundried tomatoes and onions and arrange over the goats cheese.
  6. Finely slice the olives and arrange over the sundried tomatoes.
  7. Drizzle with the olive oil and transfer to a shallow oven tray. Bake for 8-10 minutes until the cauliflower starts to turn golden and is hot through.
