Fresh cod is highly seasoned before being cooked, chopped, and arranged over a bed of greens. Fresh tomatoes and avocado keep things cool. This is an excellent meal prepping recipe, but keep your cooked fish separate from your fresh ingredients until it is time to serve and eat.

Ingredients

  • 2 ½ oz cod atlantic raw
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • ⅛ teaspoon cumin, ground
  • ⅛ teaspoon cayenne
  • ⅛ teaspoon garlic, powder
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon paprika
  • 2 teaspoon olive oil
  • ½ teaspoon lime juice, fresh
  • ¾ ounce romaine lettuce
  • 3 grape grape tomato
  • 2 ½ ounce avocado, black skin, california type
  • 1 ½ teaspoon, grated mexican blend cheese

Instructions

  1. Season a cod filet with all seasonings. Heat the olive oil in a small pan over medium heat and place in the fish. Cook the cod on both sides for at least 4-5 min per side. You may cook longer to achieve a charred edge, which may be best for this recipe. When you flip your fish, drizzle the lime juice over it to steam the fish. Set the cooked fish aside to cool slightly.
  2. Arrange chopped romaine lettuce in the base of your serving bowl. Follow this with halved grape tomatoes and avocado in any fashion you choose – sliced, diced, or mashed.
  3. Chop your cod into bite-sized pieces and arrange on top of your bowl. Follow with shredded cheese and any additional toppings you choose.
