Ingredients

  • 1 slice – 6" long bacon
  • 6 ounce ground chicken meat
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ¼ teaspoon paprika
  • ¼ teaspoon italian seasoning
  • ½ teaspoon mustard powder
  • ½ ounce fried pork rinds
  • ½ cup heavy cream
  • 0.375 cup, shredded pepper jack cheese

Instructions

  1. Cook the bacon into crispy strips. Once the bacon is cooled, chop into fresh bacon bits. Combine the bacon bits in a mixing bowl with the ground chicken, pepper, onion powder, paprika, italian seasoning, mustard powder, and pork rinds. At your discretion, you may wish to add a small pinch of salt, but keep in mind the pork rinds and bacon add salt to the meatballs.
  2. Preheat an air fryer to 350 degrees for 6 minutes. Form 3, 1 ½-inch meatballs per serving and arrange them on your air fryer baking tray. You can line the tray with parchment paper if you wish. Bake the meatballs for only 10 minutes, flipping them over halfways through.
  3. While the meatballs are baking, make the cheese sauce. Simply heat the heavy cream in a shallow pan over low heat. Once the cream just starts to simmer, whisk in the pepper jack cheese. Stir until the cheese has melted and is gently bubbling. Set the finished sauce aside to cool and thicken.
  4. Serve 3 chicken bacon meatballs per person with ¼ cup sauce.
