These chicken thighs are coated in our keto aji sauce and baked until tender and golden. Perfect served with a side of cauliflower rice and extra Aji sauce for dipping.

Ingredients

  • 4 medium chicken thigh, skin removed before cooking
  • 2 servings (per tablespoon) keto aji sauce
  • 1 clove garlic
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the chicken thighs to a large mixing bowl along with the Aji sauce. Mince the garlic and add to the bowl along with the lime zest and olive oil. Season to taste and mix together with your hands so that the thighs are evenly coated in the dressing. Cover and refrigerate for an hour.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Arrange the marinated thighs across a shallow oven tray.
  4. Transfer to the oven to bake for 35- 40 minutes or until completely cooked though and golden.
