These juicy chicken breasts are stuffed with a zesty salsa and wrapped with bacon before baking.

Perfect served alongside cauliflower rice or a green salad.

Ingredients

  • 6 slice – 6" long bacon
  • 5 cherry cherry tomato
  • 2 medium – split boneless skinless chicken breast
  • 1 teaspoon lime juice, fresh
  • 1 teaspoon lime zest
  • ½ tablespoon cilantro
  • ½ each avocado
  • ¼ medium – 2 1/2" diameter onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Finely dice the onion, tomato and avocado and roughly chop the cilantro. Add to a mixing bowl along with the lime juice, zest, salt and pepper. Mix together well to combine.
  3. Slice a pocket into each chicken breast, taking care not to cut all the way through.
  4. Divide the salsa evenly between each chicken breast, filling the center.
  5. Carefully seal the filling by wrapping each chicken breast with three strips of bacon.
  6. Arrange the chicken breasts on a shallow oven tray and bake for 20-25 minutes or until completely cooked through and the bacon is golden and crisp.
