This is a fairly quick meal to whip together! Roasting the romaine is a different way to enjoy lettuce and makes the lettuce sweet and crunchy. The soft boiled egg is my favorite part! It makes a sauce for all the rest of the meal!

Ingredients

  • 4 large egg
  • 9 slice thick cut bacon by farmland
  • 1 serving (100g) fresh food tesco romaine lettuce hearts twin pack by tesco
  • ¼ teaspoon kosher salt
  • 1 avocado, California (black skin) avocado
  • 1 medium tomatoes

Instructions

  1. Bring a small sauce pot of water to a boil, slowly drop the eggs into the boiling water. Boil for 6 minutes. Pour off the boiling water, fill pot with cold water and lots of ice! This will help the shells come off very easily.
  2. Preheat oven to 400 F and place bacon on a sheet tray side-by-side by not touching. Bake for 15 minutes.
  3. In the meantime, slice the romaine heads in half. Once bacon has been cooking for 15 minutes, add the lettuce cut side down. Bake for another 7 minutes. Flip lettuce over and sprinkle lettuce with ¼ teaspoon of kosher salt.
  4. Serve bacon and lettuce with sliced avocado, sliced tomatoes and soft boiled egg! Sprinkle avocado, tomato and egg with a little salt and pepper if you’d like!
