This rich and indulgent salad is packed with crisp lettuce, sweet balsamic glazed bacon, creamy brie and avocado.

This makes a great light lunch or dinner option.

Ingredients

  • 4 slice – 6" long bacon
  • 4 tablespoon brie cheese
  • 2 cup romaine lettuce
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • ½ small red onion
  • ½ each avocado
  • ½ tablespoon maple flavored syrup by lakanto
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Whisk together the syrup and half the vinegar. Arrange the bacon across the lined oven tray and brush each side with the syrup mixture. Transfer to the oven to bake for 12 minutes until cooked through and golden.
  3. Whilst the bacon is cooking, roughly chop the lettuce, thinly slice the onion and dice the avocado. Add to a large a serving bowl and crumble in the brie. Season with salt and pepper and drizzle over the oil and remaining vinegar, toss to combine.
  4. Tear in the balsamic bacon pieces and toss to serve.
