I love meals you can sit and forget because it allows me to focus on other parts of the meal and is hard to ruin. I use frozen fish, if you do this be sure they are fully thawed which is easy to do. I simply place them in a bowl of cool water and if I am in a hurry I let the faucet water drip into the bowl to keep the water moving and helps thaw the fish faster. In the meantime, I melt salted butter, take it off the heat and add fresh chopped basil to the mix and pour it over the fish and bake.
Ingredients
- 24 ounce cod, pacific, cooked from frozen
- 3 tablespoon butter, salted
- ½ cup, chopped basil
- ½ teaspoon salt, sea salt
- ¼ teaspoon black pepper
- 1 ½ teaspoon apple cider vinegar
Instructions
- Preheat an oven to 425 F. If using frozen cod that is presealed, place cod in a cold water in a large bowl and let water trickle on the cod until completely thawed.
- In the meantime, in a small saucepan, melt the butter. Remove from the heat and add the basil, salt, pepper and vinegar.
- Place fish in an oven safe baking dish and pour butter on top.
- Bake for 15-17 minutes until the fish reaches 145 F. Serve immediately!
