I love meals you can sit and forget because it allows me to focus on other parts of the meal and is hard to ruin. I use frozen fish, if you do this be sure they are fully thawed which is easy to do. I simply place them in a bowl of cool water and if I am in a hurry I let the faucet water drip into the bowl to keep the water moving and helps thaw the fish faster. In the meantime, I melt salted butter, take it off the heat and add fresh chopped basil to the mix and pour it over the fish and bake.

Ingredients

  • 24 ounce cod, pacific, cooked from frozen
  • 3 tablespoon butter, salted
  • ½ cup, chopped basil
  • ½ teaspoon salt, sea salt
  • ¼ teaspoon black pepper
  • 1 ½ teaspoon apple cider vinegar

Instructions

  1. Preheat an oven to 425 F. If using frozen cod that is presealed, place cod in a cold water in a large bowl and let water trickle on the cod until completely thawed.
  2. In the meantime, in a small saucepan, melt the butter. Remove from the heat and add the basil, salt, pepper and vinegar.
  3. Place fish in an oven safe baking dish and pour butter on top.
  4. Bake for 15-17 minutes until the fish reaches 145 F. Serve immediately!
