Keto Beef and Celery Stir Fry is a wonderful Chinese-style inspired dish made with ground beef. The ground beef makes this dish easy and simple for any weeknight. Minced garlic and ginger are browned together with the ground beef, then thinly sliced celery is added to the pan. The entire dish is seasoned with soy sauce and tangy rice vinegar. Serve this dish with other Chinese-style Keto and Low Carb side dishes as well as cauliflower rice to make it a complete meal. Thanks to the higher fat nature of ground beef, you should be getting a good amount of fat in the meal, but you can add a higher fat side dish if it is not enough.

What kind of ground beef should I use?

Please use 85% ground beef which does not oil out as much as 80% ground beef. Higher fat ground beef is excellent to keep you satiated after a meal.

I want to keep this meal soy-free?

To keep this dish soy-free, replace soy sauce with coconut aminos, and remember to add an extra pinch of salt to the dish because coconut aminos are less salty than soy sauce.

How do I cut the celery?

The celery should be cut on a severe bias into thin strips using a sharp chef’s knife.

Ingredients

  • ½ tablespoon extra virgin olive oil
  • 2 lb hamburger or ground beef, 85% lean
  • 1 tablespoon ginger
  • 2 clove garlic
  • 4 tablespoon tamari sauce
  • 2 tablespoon natural rice vinegar
  • 5 large – stalk – 11" to 12" long celery

Instructions

  1. Heat a large nonstick skillet over medium-high heat until hot. Add in the olive oil and swirl to coat. Add in the ground beef and begin to break it up using a spoon. Once broken up, add in minced garlic and ginger.
  2. Continue to cook and break up the ground beef until completely browned.
  3. Add in the rest of the ingredients except the celery and stir briefly.
  4. Slice the celery on a severe bias into thin strips. Place the celery into a mixing bowl and salt them with ¼ tsp kosher salt, tossing well.
  5. Add them to the pan and cook until the celery is slightly softened but still crunchy. Serve hot on top of cauliflower rice.
