This delicious bell pepper salad is loaded with flavor and texture from juicy red bell peppers, salty anchovies and olives, creamy avocado and hard boiled eggs.

This is a great lunchtime option or light dinner.

Ingredients

  • 4 medium black olives
  • 2 cup arugula
  • 2 anchovies anchovy canned
  • 2 medium boiled eggs
  • 1 medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture
  • 1 tablespoon olive oil
  • ½ each avocado
  • ¼ medium – 2 1/2" diameter red onion

Instructions

  1. Thinly slice the avocado, bell pepper, onion and olives. Add to a bowl with the arugula and roughly tear in the anchovies. Toss to combine.
  2. Peel and slice the hard boiled eggs and arrange in amongst the salad. Drizzle over the olive oil and toss gently to coat.
