About

This delicious weeknight main dish is full of Brazilian-inspired flavors like fresh cilantro, garlic, lime, and a little heat from red pepper. You can pair your chicken and steak with prepared cauliflower rice or any of the Carb Manager keto side dishes. You can even cook a full recipe at the beginning of your week for meal prepping.

Ingredients

  • ½ cup olive oil
  • ¼ cup lime juice, fresh
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 clove garlic
  • ¼ cup, chopped cilantro
  • 2 teaspoon parsley, dried
  • 1 teaspoon basil, dried
  • ½ teaspoon crushed red pepper by simply organic
  • 1 pound boneless skinless chicken breast
  • 12 oz raw beef chuck short ribs boneless trimmed to 0" fat all grades

Instructions

  1. In a bowl, whisk together all ingredients except for the chicken and beef. Set this marinade aside for later.
  2. Chop the chicken and the beef into 2-inch cubes. You may wish to cut the beef before the chicken, wiping your cutting board or surface clean before moving on to the chicken. Place the chicken and beef in their own ziploc bags.
  3. Pour the marinade equally into both bags. Close the bags and move the chicken and beef around so they get coated in their marinade. Then, roll up the bags and set them both in your refrigerator to marinate overnight or for at least 8 hours.
  4. When it’s time to cook, dump ONLY the bag of chicken with its marinade into a large skillet. Cook the chicken on high heat for about 5 minutes – until the chicken is cooked on all sides and just begins to brown.
  5. Next, dump the bag of beef with all its marinade in the pan. Continue cooking the beef and chicken together for 7-10 minutes, until the proteins are completely cooked through and they have a pan-grilled, golden crisp.
  6. Enjoy hot, and don’t forget to scrape all the juices and seasonings out of the pan for serving! You should have about 3 cups total.
