This Keto-friendly fish recipe is prepared with tender cod fillets, encased in a golden low carb crumb. Our Keto breaded fish is coated with ground almonds and crushed pork rinds to create an alternative crumb coating to traditional carb-heavy breading. Perfect served for lunch with a hearty salad or for dinner with your favorite Keto sides.

Can I Use an Air Fryer?

We have baked our Keto fish recipe in the oven until crisp and golden. If you wish, you may also cook the fish in an air fryer. Set the temperature to 390 degrees Fahrenheit and cook the fish in the air fryer basket for 12-15 minutes, or until the fish is completely cooked through and the crumb is crisp and golden all over.

Can I Use Almond Flour?

We have used ground almonds for our Keto-friendly fish breading. Ground almonds are slightly lower in carbs than almond flour and provide a heavier crumb and crispier finished texture. If you would like to use almond flour, this will still work; the crumb will just be finer in consistency. Please also be sure to adjust your macros to account for any changes made to the original recipe.

Ingredients

  • 4 tablespoon, whole pieces fried pork rinds
  • 2 tablespoon, ground almonds
  • 2 1 filet cod
  • 1 ½ teaspoon rosemary, fresh
  • 1 medium raw egg

Instructions

  1. Finely chop the rosemary and crush the pork rinds to create a chunky crumb consistency. You can crush the rinds using a rolling pin or meat tenderizer. You should have 4 tablespoons worth of pork rind crumb. Add the crushed pork rinds to a bowl along with the ground almonds and chopped rosemary. Mix well to combine. You may add a touch of salt and pepper if desired.
  2. Arrange the cod fillets on a clean work surface. Crack the egg into a separate bowl. Beat the egg well until smooth. Arrange the cod, crumb mix, and beaten egg together to create your breading station.
  3. Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray. Take one of the cod fillets and dredge it in the beaten egg, until completely coated all over. Then dredge the fillet in the crumb mixture, coating it liberally on all sides in the breading. Repeat this process with the second fillet.
  4. Arrange the fillets on the prepared oven tray. Transfer to the oven and bake for 18-20 minutes, or until cooked through. The fish should be piping hot in the center, opaque and flakey, and the crumb should be crisp and golden. Serve hot with your favorite Keto sides.
