These stuffed chicken breasts are packed with flavor from creamy brie, sweet cranberries and aromatic rosemary. The chicken is then wrapped in prosciutto for baking.

This is a great dish for the holidays, perfect with a side of roasted asparagus.

Ingredients

  • 4 medium – split skinless chicken breast
  • 4 slice prosciutto
  • 3 ½ ounce brie cheese
  • 1 ½ tablespoon, whole pieces cranberries, fresh
  • ½ tablespoon rosemary, fresh
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Roughly chop the brie and finely slice the rosemary. Add to a mixing bowl along with the cranberries and a pinch of salt and pepper. Mix together so that the cheese and cranberries are well seasoned.
  2. Slice a pocket into the side of each chicken breast, taking care not to cut all the way through.
  3. Divide the cheese and cranberry mixture evenly between each chicken breast, stuffing the center of each.
  4. Tightly wrap each breast with a slice of prosciutto.
  5. Transfer to the oven to bake for 23-25 minutes or until the chicken is completely cooked through and the ham is golden.
