What To Eat With Keto Pizza

If you want to include the Keto buffalo shrimp pizza in your meal prepping, you’ll need a side dish to make a full meal. While the pizza is low carb, you’ll need to calculate your additional carbs carefully. Choose low-carb vegetables like mushrooms or zucchini if you want a healthier side dish.   • 5 ½ oz zucchini
  • 1 large raw egg
  • ½ cup, grated parmesan cheese
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 tablespoon butter, unsalted
  • 4 tablespoon red hot original cayenne pepper sauce
  • 10 large raw shrimp
  • ¼ teaspoon seasoned salt
  • 2 teaspoon olive or extra virgin olive oil
  • 1 ½ oz shredded lettuce
  • 2 oz tomato
  • 2 tbsp, crumbled, not packed blue cheese

Instructions

  1. Turn on an oven to preheat to 400 degrees and prepare the zucchini pizza crust. Line a large sheet tray with parchment paper and set this aside. Use a cheese grater to shred a whole zucchini. Then, use your hands to squeeze the excess water out of the zucchini shreds into a sink, and add the dehydrated zucchini to a large mixing bowl. The weight listed in the ingredients is the final yield of your dehydrated zucchini.
  2. Add an egg, parmesan cheese, salt, and pepper to the zucchini shreds, and mix to combine. Once you have your pizza crust mixture, spread it out into a 10-inch circle on your prepared sheet tray. You can use a spatula to press the pizza crust into shape, making the edges a little thicker than the middle. Once the pizza crust is shaped, bake it for 20 minutes.
  3. While the pizza crust is going through its first round of baking, make the buffalo shrimp. Make the buffalo sauce first by melting the butter in a small pot over low heat. Choose a red hot sauce that is the brand Frank’s Red Hot or similar. Tabasco sauce isn’t the best choice for this recipe, but you may include some if you enjoy the flavor. Pour your preferred hot sauce into the pot of melted butter, and stir over the heat until the sauce comes together and heats through. Once the sauce has fully heated through, you can set it aside for later.
  4. Peel and devein jumbo shrimp, and add them to a small mixing bowl. Toss the raw shrimp with seasoned salt and olive oil until the shrimp is coated. From here you can add any additional spices you enjoy with your buffalo sauce. Some suggestions are black pepper, paprika, garlic powder, or dried ground herbs. Continue onto the next step before the pizza crust finishes cooking.
  5. Heat a small pan over medium-high heat. When the pan is hot, place the marinated shrimp in the pan. Cook the shrimp on one side until they just turn golden. Flip the shrimp over and cook to the same doneness on the other side in the pan. Then, reduce the heat to medium, and pour 2-3 tablespoons of buffalo sauce into the pan. Toss and fry the shrimp in the buffalo sauce until you see the sauce cooked into the flesh. Take the pan off the stove, and set it aside for later.
  6. When the pizza crust is done, remove it from the oven. Reduce the oven heat to 350 degrees, and focus on assembling the pizza. Arrange the cooked buffalo shrimp on the zucchini pizza crust, and arrange shredded lettuce over the top. Chop the tomato and sprinkle it over the lettuce, followed by blue cheese crumbles. Pour the remaining buffalo sauce from earlier over the pizza
  7. Return the pizza to the oven and cook for an additional 20 or more minutes. For doneness, the edges of the zucchini pizza crust should be dark golden, the blue cheese will be melted in place, and the shrimp with buffalo sauce will be darker. Let the pizza cool for 5 minutes before slicing into quarters for serving. One serving is one slice of pizza.
