This quick and easy cabbage pasta is cooked with aromatic thyme, garlic, a hint of lemon, broccoli and topped with tangy grated parmesan.

This is a quick and easy option for lunches or weekday dinners.

Ingredients

  • 1 ½ cup cabbage
  • 1 ½ tablespoon unsalted butter
  • 1 tablespoon, grated parmesan cheese
  • 1 clove garlic
  • 1 teaspoon, chopped thyme, fresh
  • 1 teaspoon lemon peel or zest raw
  • ½ cup broccoli
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cut the broccoli into bite sized chunks. Add to a pan of boiling water and simmer for 4-5 minutes until fork tender. Drain the water completely and set aside to steam dry.
  2. Thinly slice the cabbage into strips. Thinly slice the garlic. Melt the butter in a skillet over a medium heat. Add the cabbage, garlic, lemon zest and thyme. Season and stir to combine, cooking for 3-4 minutes to soften the cabbage.
  3. Add the broccoli florets, stir to combine and cook for a further minute or two until the cabbage has softened.
  4. Sprinkle over the grated parmesan to serve.
