This quick and easy low carb spaghetti is loaded with oozy cheddar cheese, aromatic chives and topped with crispy bacon.

This is a great option for weeknights when you are short on time!

Ingredients

  • 2 slice – 6" long bacon
  • 1 large zucchini
  • 1 clove garlic
  • 1 tablespoon chives, raw
  • ½ cup, grated cheddar cheese
  • ½ tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the skin from the zucchini and discard. Peel the flesh into long ribbons.
  2. Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp. Remove the bacon from the pan, leaving the bacon fat in the skillet. Set aside.
  3. Crush the garlic and add to the skillet with the bacon fat and add the zucchini ribbons. Cook for 3-4 minutes or until tender.
  4. Remove the skillet from the heat. Finely chop the chives and add to the skillet along with the cheese, salt and pepper. Stir through the zucchini spaghetti to combine.
  5. Crumble over the cooked bacon to serve.
