About

Thin-sliced chicken breasts are strongly seasoned before each is wrapped in a slice of prosciutto. Piled on top of each chicken breast is a mound of French green beans, which are seasoned as well. While in the oven, the prosciutto turns crispy, just like bacon, while the chicken stays tender. To top it all off, extra dollops of butter add Keto fat and flavor to your meal. This is a genius recipe to follow for your Keto meal prep because you can have your protein and vegetable side baked together as one. This saves you time or gives you the opportunity to include another Keto side dish with your meal prep. A special note about preparing the green beans is continued below. A Note On Green Beans

The salty prosciutto and melted butter tenderize the green beans used in this recipe to an al dente texture. If you want softer green beans for your meal, you can add an additional step during preparation. Simply boil or steam the green beans for only about 2 minutes before placing them in an ice bath. Then, continue preparing the green beans as instructed in the recipe. If you are using regular green beans instead of French green beans, this additional step is recommended. Do not use green beans that have been previously frozen, or else they’ll turn to mush in your oven.

Ingredients

  • 4 ounce french green beans by trader joe's
  • ½ teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon italian seasoning
  • 8 oz chicken breast boneless skinless raw
  • ⅛ teaspoon lemon pepper seasoning
  • ⅛ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 2 slice prosciutto
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat an oven to 350 degrees. Toss whole, washed, French green beans in a mixing bowl with the olive oil, salt, and Italian seasoning. You can quickly mix with one hand until the green beans are coated in the spices. If you want softer green beans without any snap to them, you can blanch or steam your green beans beforehand for just 1-2 minutes.
  2. Set the bowl of green beans aside. Prepare 4-ounce chicken breasts by patting them dry and pounding them to ½-inch thick pieces with the flat side of a meat tenderizer. You can also slice a tick, 8-ounce chicken breast into thin slices for this recipe. Season the thin-sliced chicken breast with lemon pepper, pepper, paprika, and garlic powder.
  3. Prepare a well-seasoned sheet tray with some pan spray or line with parchment paper. Lay down 1 slice of prosciutto per serving horizontally on the tray. Place the seasoned chicken in the center of each prosciutto slice to make a cross. Arrange about 2 ounces of seasoned green beans in the center of each chicken breast and pull the two ends of prosciutto over the beans.
  4. If necessary, use 2-3 toothpicks per serving to secure the prosciutto in place over the green beans and chicken. Cut the butter into small dollops, and arrange about ½ tablespoon of butter dollops on top of each wrapped chicken portion. Place a dollop of butter over the ends of the prosciutto will also help them stay in place during baking. Set your tray of wrapped chicken in the oven for 20 minutes before enjoying.
