In search of a weeknight, one-pan dinner? This savory dish is the perfect combo of protein from chicken and spinach with plenty of buttery sauce to coat all the ingredients. Expect the flavors to be rich, thanks to porcini mushrooms that rehydrate to make an intensely savory liquid – perfect for the sauce’s base!

Ingredients

  • ½ ounce dried porcini mushrooms by earthly delights
  • ½ cup warm water
  • 1 pound boneless skinless chicken breast
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • 2 tablespoon butter
  • 2 cup spinach

Instructions

  1. Place the dried porcini mushrooms and water in a small pot over the stove. Bring the water to a simmer and cook until the mushrooms rehydrate – about 5 minutes. Set this aside when done.
  2. Chop your chicken breast into cubes. Heat the olive oil in a large pan over medium heat and place in the chicken with the salt, pepper, garlic, and italian seasoning.
  3. Place a lid on the pan, and cook the chicken for 4-5 minutes. The chicken should be nearly cooked through, and plenty of liquid should gather in the pan.
  4. Turn the heat to a lower simmer, and melt the butter into the pan. Then, pour the rehydrated porcini mushrooms and all their liquid into the pan. Stir everything together and allow the pan to simmer on a low heat for about 3 minutes openly.
  5. Finally, stir the spinach into the pan and cook it down until the spinach is bright green and wilted. Enjoy hot!
