About

Carb Manager has lots of Keto recipes that are great for the whole family to share, even kids and picky eaters! This casserole dish has everything needed in a classic family dinner. The recipe starts with a layer of bacon filled with a seasoned chicken burger mixture. Placed on top of the chicken burger filling are fresh Keto cheeseburger toppings, including a high-fat “special sauce”. No cheeseburger is complete without the best part: a thick, melted layer of cheddar cheese. The casserole is easy to slice and serve with a spatula. Healthy Keto side dishes may include one of Carb Manager’s simple salads, a bed of low-carb vegetables cooked with butter or olive oil, or one of many ‘cauliflower mash’ recipes that can be found in the Premium Recipe library. Use this Keto casserole recipe for your next daily meal prep, freezer-meal preparation, or a large group.

More Keto Cheeseburger Toppings

Most toppings that go on a cheeseburger are Keto or can be Keto if eaten in moderation. Feel free to substitute the cheddar cheese with other favorite cheeses that are melted on burgers. Other cheeseburger toppings not included in this recipe that are still Keto are homemade pickles and moderate amounts of onion. Try not to add more ketchup to the recipe, but adding more mustard can add more flavor with less sugar.

What’s The Best Bacon For This Recipe?

You can choose your favorite brand or flavor of bacon to make the casserole, as long as there is no added sugar. It’s best to choose pre-sliced, American-style bacon. Pork will shrink more once it’s heated if it’s sliced from a slab because the meat is more stressed. Pre-sliced bacon will already be rested in its packaging, so it won’t shrink quite as much once you bake it.

Ingredients

  • 12 oz bacon
  • 1 lb ground chicken meat
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon mustard powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon paprika
  • 2 tablespoon mayonnaise
  • ½ teaspoon ketchup
  • 1 teaspoon mustard
  • 1 oz shredded lettuce
  • 2 oz tomato
  • ½ cup, shredded cheddar cheese

Instructions

  1. Turn on an oven to preheat to 375 degrees and spray a glass 7×5 baking dish with pan spray. Line the dish with raw slices of bacon by beginning at the left corner and working to the right. When starting on the left side, alternate slices of bacon laying vertically and horizontally, leaving the ends of bacon slightly hanging over the edge of the dish. As you reach the right side of the dish, begin alternating strips of bacon both vertically and horizontally on that side as well. Set the dish aside once the bacon is layered.
  2. In a large mixing bowl, combine ground chicken, salt, pepper, mustard powder, garlic powder, onion powder, cumin, and paprika. Once the meat mixture is combined, place it into the bacon-lined dish, and spread it in an even layer to all four corners. Don’t leave any empty space between the chicken and bacon. In a clean bowl, whisk together mayonnaise, ketchup, and mustard. Spread the sauce across the top of the ground chicken burger filling.
  3. Sprinkle a bed of shredded lettuce over the sauce, followed by thin slices of tomato. Take the bacon ends that were hanging over the edges of the dish, and fold them over the top of the casserole. You can overlap the corner pieces of bacon to help reinforce the casserole. Finally, sprinkle the shredded cheddar over the entire top of the casserole. Make sure you also cover the bacon ends to keep them from popping up during baking.
  4. Cover the casserole dish with aluminum foil and place it in the oven. Bake the dish for 30 minutes, then uncover the dish. Bake for another 30 minutes, uncovered, until the casserole is done. There will be some overall shrinkage of the casserole, and the cheese will be melted and golden across the top. If there is excess liquid in the dish that hasn’t evaporated, you may drain it off. Allow the casserole to cool for 5 minutes before cutting into slices and serving with a spatula. A standard 7×5 casserole should yield 6 slices.
