These keto chicken nuggets are breaded with seasoned ground almonds to create a crisp and golden crumb.
Perfect for families served with slaw or keto fries!
Ingredients
- 6 ounce food cupboard home baking almonds ground by sainsbury's
- 1 pound boneless skinless chicken breast
- 1 teaspoon rosemary, fresh
- 1 medium raw egg whole
- ½ teaspoon onion powder
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray with a little oil.
- Add the ground almonds, onion powder, salt and pepper to a mixing bowl. Finely chop the rosemary, add to the bowl and stir well to combine.
- Beat the egg in a large bowl, dice the chicken and add to the bowl, coating it in the egg.
- Tip the ground almond mixture out onto a clean surface or baking sheet. Drop the egg coated chicken pieces into the mixture, half a batch at a time and turn each piece until it is well breaded all over.
- Arrange the breaded chicken across the oven tray and bake for 18 minutes or until the chicken is completely cooked through and the coating is crisp and golden.
