These keto chicken nuggets are breaded with seasoned ground almonds to create a crisp and golden crumb.

Perfect for families served with slaw or keto fries!

Ingredients

  • 6 ounce food cupboard home baking almonds ground by sainsbury's
  • 1 pound boneless skinless chicken breast
  • 1 teaspoon rosemary, fresh
  • 1 medium raw egg whole
  • ½ teaspoon onion powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray with a little oil.
  2. Add the ground almonds, onion powder, salt and pepper to a mixing bowl. Finely chop the rosemary, add to the bowl and stir well to combine.
  3. Beat the egg in a large bowl, dice the chicken and add to the bowl, coating it in the egg.
  4. Tip the ground almond mixture out onto a clean surface or baking sheet. Drop the egg coated chicken pieces into the mixture, half a batch at a time and turn each piece until it is well breaded all over.
  5. Arrange the breaded chicken across the oven tray and bake for 18 minutes or until the chicken is completely cooked through and the coating is crisp and golden.
