This flavorsome fried cauliflower rice is mixed with chorizo and egg to create a quick and easy protein packed lunch.
Perfect served with a simple salad or a side of steamed vegetables.
Ingredients
- 2 medium raw egg
- 1 ¾ ounce chorizo
- 1 tablespoon red onion
- 1 clove garlic
- 1 teaspoon rosemary, fresh
- 1 cup cauliflower rice
- 1 tablespoon olive oil
- 1 tablespoon cilantro
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Dice the chorizo into bite sized chunks. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the chorizo and cook until golden and it releases its smokey oils.
- Finely dice the onion and finely slice the garlic and rosemary. Add to the pan with the chorizo, cooking for a minute or two until tender and fragrant.
- Add the cauliflower rice to the pan and stir well to combine, cooking for a minute to soften the rice.
- Beat the eggs together in a small bowl. Make a well in the center of the rice mixture and pour in the beaten egg. Let the egg settle for a moment and start to cook, then take a spatula and scramble the egg, folding it into the rice mixture until cooked through.
- Scatter with fresh chopped cilantro to serve.
