Can I Use Frozen Cranberries?

We have used fresh cranberries to make our festive Keto steak relish. Frozen cranberries can be more accessible over the holidays and also more practical to buy if you don’t have the need to use a whole tub of fresh. If you prefer, you may use frozen cranberries instead of fresh in the same quantities. Simply cook as directed.

What Kind of Steak Can I Use?

We have used porterhouse for our low carb Christmas steak recipe. This recipe would work just as well with any cut of steak you prefer, and the dressing could also be served over a sharing rib of beef. Be sure to adjust your macros to account for any changes made to the ingredients and adapt your cooking times as needed for different cuts of meat.

Ingredients

  • 8 ounce beef porterhouse steak
  • 8 ounce beef porterhouse steak
  • 2 tablespoon red onion
  • 1 tablespoon orange juice
  • 1 teaspoon rosemary, dried
  • 1 clove garlic
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ⅓ cup cranberries, fresh
  • ½ cup water
  • ½ tablespoon maple flavored syrup by lakanto
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Finely dice the onion and crush the garlic. Add the cranberries, onion, garlic, orange juice, rosemary, vinegar, water, salt, pepper and syrup to a small saucepan. Bring the mixture up to a boil.
  2. Reduce to a simmer and stir well. Simmer for 15 minutes, stirring often and crushing the cranberries as you go. Cook until the liquid has reduced right down, and you have a thick jam-like consistency. If the mixture looks a little dry, you may add more water as needed.
  3. Just before the dressing has finished cooking, you can prepare the steaks. Heat a skillet over a medium/high heat. While the skillet is heating, rub the steaks in olive oil and season on both sides with salt and pepper. Place the steaks in the hot skillet and cook for 2-3 minutes each side for medium-rare or cook through to your preference. Set the steaks aside to rest for a few minutes, then top each with cranberry relish to serve.
