For a fresh, tropical meal that’s on the table quickly, make these coconut lime shrimp! They only take about 10 minutes from the time you make up the marinade to the time you take them out of the oven. Serve the shrimp with a zucchini or other low-carb side dish.

Ingredients

  • ½ pound wild uncooked argentinian red shrimp by trader joe's
  • 2 tablespoon extra virgin olive oil
  • ½ tablespoon lime juice, fresh
  • ½ tablespoon water
  • 1 clove garlic
  • ¼ cup, shredded coconut, dried, shredded or flaked, unsweetened
  • ¼ cup, chopped cilantro
  • ¼ teaspoon salt

Instructions

  1. Rinse and devein shrimp.
  2. Grate the garlic and add it to a small bowl. Add the olive oil, lime juice, water, salt and shredded coconut.
  3. Add the cilantro and coconut mixture to a blender and blend well.
  4. Toss the shrimp in the coconut lime mixture. Lay the shrimp on a parchment-covered sheet pan in a single layer. Pour any remaining coconut lime mixture on top of the shrimp.
  5. Roast at 400 degrees for 3-5 minutes, depending on the size of the shrimp. Eat right away!
