This simple cod dish is packed with flavor and perfect for a simple mid week meal.

The cod is served on a bed of spinach combined with crisp pancetta and salty capers. This would work well alongside a portion of buttery cauliflower mash.

Ingredients

  • 2 fillet – each 4 ounce raw cod, cooked from fresh
  • 2 tablespoon olive oil
  • 3 cup, cut pieces baby spinach
  • 1 clove garlic
  • 6 ounce diced pancetta by waitrose
  • ½ tablespoon, whole pieces capers
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and arrange a large piece of foil across and shallow oven tray.
  2. Lay the cod fillets on the foil. Season and drizzle over the olive oil. Wrap the foil up around the fish to create a parcel and bake for 15 minutes or until opaque and tender.
  3. Whilst the cod is cooking, heat the remaining olive oil in a frying pan over a medium heat and add the pancetta. Cook until browned all over.
  4. Mince the garlic and roughly chop the capers. Add them to the pan with the pancetta, frying gently until fragrant.
  5. Add the spinach to the pan and stir into the pancetta until just wilted.
  6. Serve the baked cod on top of the pancetta and caper spinach.
