These crispy chicken wings are marinated in an aromatic curried sauce then baked until golden and caramelized.

Perfect for serving with cauliflower rice or keto slaw.

Ingredients

  • 21 ounce chicken wing, skin eaten
  • 2 clove garlic
  • 2 teaspoon tomato puree
  • 2 tablespoon olive oil
  • 2 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon spices cumin seed or ground
  • 1 teaspoon spices coriander seed or ground
  • 1 slice – 1" diameter ginger root, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the olive oil, tomato purée, dried spices, lemon zest, salt and pepper to a mixing bowl. Crush the garlic and finely grate the ginger and add to the bowl. Stir well to combine.
  2. Add the chicken wings to a large mixing bowl and spoon over the marinade. Use your hands to massage the marinade into the chicken so that it is well coated. Cover and refrigerate for a minimum of 2 hours.
  3. Preheat the oven to 400 degrees Fahrenheit.
  4. Arrange the marinated wings across a shallow oven tray.
  5. Transfer to the oven to bake for 25-30 minutes until crisp and golden, turning halfway through.
