These simple keto lettuce cups are loaded with crispy fried pork, tender onion, tangy tamari sauce and earthy sesame.

These make a great lunch option or light dinner.

Ingredients

  • 9 ounce ground pork
  • 4 outer (large) leaf romaine lettuce
  • 1 tablespoon tamari sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic
  • 1 tablespoon olive oil
  • ½ medium – 2 1/2" diameter white onion

Instructions

  1. Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and add to the skillet, sweating gently until tender.
  2. Add the ground pork and increase the heat to medium/high. Cook through until browned all over.
  3. Add the sesame oil and tamari and cook for 2-3 minutes more until the pork and onions are golden and crisp at the edges.
  4. Divide the pork between the four lettuce leaves to serve.
