It’s a Keto rendition of popular chicken scampi, which is another variant of the more classic shrimp scampi. White meat chicken breasts are quickly seasoned and cooked to golden brown in a pan. The chicken is paired with a two-ingredient white wine butter glaze sauce. Don’t worry, no wine is actually used in the recipe, just white wine vinegar. All the ingredients with carbs have been omitted or replaced in this recipe so you can have a totally Keto main component to your meal. What Is Scampi?

Scampi is actually a name for a type of shrimp, but most recognize it as the name of a popular Italian dish. Shrimp scampi is the original dish, but so many have made the recipe with chicken that chicken scampi is now equally popular. Traditional scampi dishes consist of peppers, onions, white wine, and a creamy sauce. Many restaurants will include scampi with pasta as well.

Is The Dish Spicy?

Crushed red pepper flakes are included in the chicken seasoning. If that’s too spicy for you, you are welcome to reduce the amount or omit it entirely. There are no other spicy ingredients included in the recipe. Remember that some of the chicken seasonings will cook in the sauce as well, so both the chicken and the sauce have a level of heat to them.

Ingredients

  • 3 oz chicken breast boneless skinless raw
  • ¼ teaspoon olive or extra virgin olive oil
  • 1 dash salt
  • 1 dash black pepper
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon garlic powder
  • ¼ teaspoon oregano, dried
  • ⅛ teaspoon thyme, dried
  • ⅛ teaspoon crushed red pepper flakes
  • 1 tablespoon butter, unsalted
  • ¼ teaspoon white wine vinegar

Instructions

  1. Prepare 3-ounce chicken breasts by patting them dry with a paper towel and rubbing ¼ teaspoon olive oil into each portion. Season the chicken with salt, pepper, onion powder, garlic powder, oregano, thyme, and crushed red pepper. If you choose, you can marinate the chicken before cooking, but it tastes just as good as cooking right away. Heat a pan over medium heat and place the chicken in, seasoned side down.
  2. Let the chicken cook until it’s golden on one side – about 3-4 minutes. Flip the chicken over and reduce the heat to medium-low. Place a lid over the pan to finish cooking the chicken. After another 2-3 minutes, the chicken should be done. Transfer your finished chicken to a serving dish or cutting board to rest, and leave the pan on the stove.
  3. Reduce the heat to the lowest setting. Deglaze the pan with cold butter, using a wooden spoon to scrape up any leftover seasonings in the pan. Once the pan is deglazed, pour white wine vinegar into the pan. Let the pan sizzle and reduce briefly, and stir the sauce together one final time. Since the sauce is simply butter and vinegar, it will not be a creamy sauce but a light glaze instead. Pour the scampi sauce over the chicken for serving.
