Simple yet delicious, this lamb dish is perfect for Sunday lunch served with your favorite low carb veggies.

This recipe calls for a half leg of lamb, but you could go for a whole leg and simply adapt the basting quantities to suit.

Ingredients

  • 2 pound leg of lamb
  • 2 clove garlic
  • 1 tablespoon rosemary fresh
  • ½ tablespoon thyme fresh
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 370 degrees Fahrenheit. Peel and slice the garlic cloves and score the fat on top of the lamb. Wedge the sliced garlic pieces into the scored lamb fat.
  2. Finely chop 1 tablespoon of rosemary, pick 1/2 tablespoon of thyme leaves and add to a small bowl with the salt and pepper. Mix well to combine, then pour in the olive oil.
  3. Baste the oil and herb mixture all over the top of the lamb and a little on the sides.
  4. Transfer to the oven to roast for between 1 hour 15 and 1 hour 30, until the lamb is cooked through to your preference.
  5. Cover with foil and rest for 15 minutes before carving.
