These chicken thighs are so fragrant and make for a delicious meal prep lunch! When you cut into each thigh, you’ll get a burst of a creamy center holding fresh garlic and chives. A generous layer of parmesan on top gives each chicken thigh a slightly crispy coating to give you complementary textures to enjoy.

Ingredients

  • 3 ounce cream cheese
  • 1 teaspoon garlic
  • 1 tablespoon chives
  • 1 pound chicken thigh, skin removed before cooking
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • 1 teaspoon olive oil
  • 8 teaspoon, shredded parmesan cheese

Instructions

  1. Preheat an oven to 375 degrees and lightly spray and 9X13 glass baking dish. In a microwave safe bowl, heat the cream cheese for 15-20 seconds, until it’s warm and pliable. Stir in the garlic and chopped chives. Set this mixture aside to set slightly.
  2. Prepare 4 chicken thighs by unraveling them and laying them open on a flat surface. Sprinkle a pinch of salt and pepper each over each chicken thigh.
  3. Use a fork or spoon to smear a portion of cream cheese mixture over each chicken thigh, as pictured.
  4. Gently bring the far ends of each chicken thigh together in the center, and flip each chicken thigh over so they rest on the seam you just created. Brush a ¼ teaspoon of olive oil over the bare tops of each chicken thigh. Then, roll the chicken thighs in shredded parmesan, so each thigh is covered in about 2 teaspoons of parmesan. You can lightly press the parmesan into the chicken if any does not stick. Place each chicken thigh in your prepared pan, with the closed seam on the bottom.
  5. Bake the dish for 40-45 minutes – enough time for the parmesan to melt and give a golden brown top to the chicken. Enjoy!
