These simple chicken pieces are crispy and flavorful thanks to a lemon and herb marinade. The bright green marinade is delicious, so consider making extra to chop the chicken with after cooking, or as a sauce or dip for vegetables. Serve these with your favorite veggie side dish.
Ingredients
- 4 medium chicken thigh with skin
- 4 medium chicken drumstick with skin
- 3 tablespoon extra virgin olive oil
- 1 medium – 2 1/8" diameter lemon, fresh
- 4 tablespoon dill weed, fresh
- 2 tablespoon, chopped basil
- 3 tablespoon, chopped parsley
- 2 tablespoon, chopped cilantro
- 4 clove garlic
- ¾ teaspoon salt
Instructions
- Add all of the ingredients except the chicken into a blender.
- Blend until smooth and set marinade aside.
- Pour marinade on the chicken pieces and toss and rub chicken in the marinade. Refrigerate for 2-4 hours.
- Preheat the oven to 400 degrees Fahrenheit. Lay the chicken pieces out on a sheet pan in a single layer, allowing space between pieces.
- Roast for 45 minutes – 1 hour, or until the skin is golden and begins to crisp.
