About

This simple pork dish is seasoned with aromatic herbs and spices and combined with tender bacon and juicy bell peppers.

This makes a great main served with cauliflower rice or a filling for lettuce wraps.

Ingredients

  • 7 ounce ground pork
  • 2 tablespoon, chopped shallot
  • 2 slice – 6" long bacon
  • 1 teaspoon oregano, dried
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • 1 small yellow pepper
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Finely dice the bacon and thinly slice the shallot. Add to the pan and cook until the bacon is browned and the shallot is tender.
  2. Thinly slice the pepper and add to the pan along with the ground pork, oregano, paprika, salt and pepper. Stir well to combine. Pan fry until the pork is cooked through and the peppers are tender.
