What is London broil?

Often misinterpreted as a cut of beef, London broil actually refers to a method and style of cooking. Typically lean top round or flank steak is marinated in condiments and spices then broiled or grilled until medium-rare. The beef is then served thinly sliced across the grain. For this Keto instant pot recipe, we have used the instant pot to cook our London Broil until deliciously tender.

Can I Use a Different Marinade?

London Broil makes an incredibly versatile Keto dinner recipe. There are no rules and regulations regarding spices or seasoning, and you can experiment with your favorite low carb flavors as desired. For this Keto pressure cooker recipe, we have used a Mediterranean inspired marinade of Italian seasoning, olive oil, balsamic vinegar, tomato sauce, garlic, and onion powder. Please be sure to adjust your macros for any changes you make to the original recipe.

Ingredients

  • 17.5 ounce beef flank steak
  • 2 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon italian seasoning
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon garlic powder
  • ½ cup beef broth, bouillon or consomme, ready-to-serve can
  • ½ teaspoon salt, sea salt
  • ¼ cup tomato sauce
  • â…› teaspoon black pepper

Instructions

  1. Add the beef to a large bowl. Add the Italian seasoning, garlic powder, onion powder, salt, pepper, balsamic vinegar, 1 tablespoon of olive oil, and the tomato sauce. Use your hands to rub the flavorings all over the beef. Cover with plastic wrap and refrigerate for 5 hours to marinade.
  2. Add the remaining olive oil to the instant pot and set to sauté. Add the marinated beef. Sear the beef on both sides until well browned all over. This will take a couple of minutes each side. Cancel the sauté function.
  3. Add the beef stock to the instant pot. You may use a chicken or vegetable stock if preferred. Place the lid securely on the instant pot and ensure it is set to sealing. Select high pressure and set the timer for 12 minutes. After 12 minutes, do a quick release of the pressure. The beef should be medium rare, however cook longer if desired. Allow the beef to rest for 5 minutes, then thinly slice across the grain to serve.
