These quick and easy Keto drumsticks make the perfect kid-friendly dinner. Tender chicken drumsticks are wrapped in sliced bacon and oven-baked until golden, before being finished with a layer of tomato sauce and bubbling cheddar cheese. These are a great Keto family dinner option with minimal prep and maximum flavor.

Can I Use Chicken Thighs Instead?

We have used chicken drumsticks as a cost-effective but flavorsome cut of meat – perfect for wrapping in bacon! However, you may use an alternative cut of chicken such as thighs or even chicken breast. We have provided enough topping ingredients to cover four medium-sized drumsticks. If you choose to use a different cut of chicken, you will need to adjust both your toppings and cooking times accordingly.

Ingredients

  • 8 slice – 6" long bacon
  • 4 medium chicken drumstick, skin eaten
  • 4 tablespoon, grated cheddar cheese
  • 2 tablespoon tomato sauce

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Take a drumstick and wrap it tightly in two strips of bacon, so that it is well covered. Repeat this process with the remaining drumsticks using up all the bacon.
  2. Arrange the bacon wrapped drumsticks across a shallow oven tray. Transfer to the oven and bake for 30 minutes until golden and the bacon and chicken skin are crisp. Remove from the oven and smother the tops of each drumstick with a generous half tablespoon of the passata (tomato sauce). Divide the grated cheese evenly between the drumsticks, sprinkling over the tops of each so it sticks to the tomato sauce.
  3. Return the cheese and tomato topped drumsticks to the oven. Bake for a further 5-7 minutes or until the chicken is entirely cooked through, the skin and bacon crisp and golden and the cheese bubbling and melted. Serve the drumsticks hot with your choice of kid-friendly Keto sides.
