I love how easy this chicken is able to be prepared, but with a great amount of flavor!! The garlic, lemon and thyme pairs perfectly well with chicken. This is the loveliest main dish to pair with any side.

*If you use a fine salt, cut the salt down by at least 1/2 teaspoon

**2 T thyme = 8 fresh sprigs (which is what I used in the recipe below).

Ingredients

  • 1 pound raw chicken breast boneless skinless
  • 1 teaspoon coarse kosher salt by morton
  • 1 tablespoon avocado oil
  • ½ medium – 2 1/8" diameter lemon
  • 1 tablespoon lemon juice
  • 2 tablespoon chicken broth
  • 2 clove peeled garlic cloves by heb
  • 2 tablespoon thyme, fresh

Instructions

  1. Preheat an oven to 350 F. Season chicken breasts with salt. In the meantime, heat a heavy skillet over high heat until very hot. Add avocado oil and heat until shimmering (30 seconds). Add the chicken breasts and sear on one side, turning the heat down to medium-high (without disturbing it) for 4 minutes.
  2. Smash the garlic cloves, add those along with the lemon juice and chicken broth to the pan to deglaze it, scraping the pan with a spatula to help the delicious brown bits to release.
  3. Add ½ lemon thinly sliced on top with fresh thyme. Bake chicken for 15 minutes or until the internal temp of the thickest part of the breast reads 165 F.
