Summer to me means grilling! The first thing that comes to mind is skewers because they are simple and work great to make ahead to take to work. I used a mediterranean seasoning on these that includes chili, oregano, rosemary and thyme which makes this so so delicious and fresh. This makes about 8 skewers so a serving size is about 2 skewers a piece.

Ingredients

  • 3 medium breast (yield after cooking, bone and skin removed) chicken breast
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ tsp, leaves spices thyme dried
  • ¼ tsp, leaves spices oregano dried
  • ¼ tablespoon spices rosemary dried
  • ¼ teaspoon spices coriander seed
  • ¼ teaspoon black pepper
  • ½ teaspoon kosher salt
  • ¼ large head (6-7 in. dia) cauliflower
  • 1 medium (approx 2-3/4 in. long, 2-1/2 in. dia) green bell pepper
  • 1 medium zucchini
  • 2 tablespoon olive oil
  • ½ teaspoon kosher salt

Instructions

  1. Soak skewers in water overnight to prevent them from burning on the grill.
  2. Dice chicken into 1’ cubes. Place in a large mixing bowl and combine with all the dried spices including the black pepper and ½ t salt.
  3. Cut the cauliflower into florets, the green bell pepper into 1” pieces and cut the zucchini in half and then into half moon shapes. Toss all the veggies in 2 T olive oil and ½ t salt.
  4. Start skewering by alternating chicken, zucchini, bell pepper, cauliflower. I would also double up on chicken once in awhile if the pieces were on the smaller side.
  5. Preheat a grill until it’s very hot. Place skewers on the grill and cook on each side for several minutes until the chicken is cooked through and the veggies have a nice char on them about 12-15 minutes. Serve hot!
