Thin-sliced style sirloin steak is filled with spicy jalapenos and tons of gooey colby jack cheese. They’re served over a heaping bed of cilantro lime cauliflower rice, spiced with simply a little salt and garlic. You can garnish your steak rolls with more cilantro, lime juice, or fatty sour cream for dipping.

Ingredients

  • 10 ounce cauliflower rice
  • 1 tablespoon lime juice, fresh
  • ½ teaspoon salt
  • 1 teaspoon garlic
  • 2 teaspoon, chopped cilantro
  • 8 ounce beef steak, top round, visible fat eaten
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • ¼ teaspoon onion powder
  • ½ teaspoon cumin, ground
  • ¼ cup, shredded colby jack cheese
  • 8 slice jalapeno peppers
  • 1 teaspoon olive oil
  • 2 tablespoon, shredded colby jack cheese

Instructions

  1. In a large pan, cook the cauliflower rice and lime juice together over high heat until the rice soaks up all the juice.
  2. Stir the salt, garlic, and cilantro into the rice. Continue cooking, adjusting the heat to avoid burning, until the cauliflower rice is tender and lightly charred. Transfer the rice from the heat to a serving dish.
  3. On a clean surface, slice a thin sliced, “sandwich steak” style top round sirloin into 2 pieces. Sprinkle the second amount of salt, the pepper, onion powder, and cumin over the steaks.
  4. Next, arrange the first amount of colby jack cheese on top of the steaks, leaving a ½-inch bare edge. Lay about 4 slices of fresh jalapeno on top of each steak.
  5. Wipe clean the large pan you used earlier. Heat the olive oil in the pan over medium-high heat. Gently roll up each steak into a tight roll with the cheese and jalapenos in the center. You may need to secure the steak rolls shut with toothpicks for cooking. Pick up the steak rolls and lay them down in the hot pan with the seam-side down.
  6. Cook the steaks on their seams for 3-4 minutes so they seal shut and obtain a beautiful golden brown char. Use a pair of tongs to gently rotate the steak rolls so they cook to a golden brown on all sides.
  7. Serve the hot steak rolls over the cauliflower rice and remove the toothpicks. Sprinkle the final amount of colby jack cheese over the tops of the hot steak rolls so it melts. Serve and enjoy!
