These crusted pork fillets are coated in a crumb of ground almond, Parmesan, lemon zest and thyme, then pan fried until crisp and golden.

Perfect served with roasted vegetables or a green salad.

Ingredients

  • 2 chop pork chops, center loin, fresh, visible fat eaten
  • 1 tablespoon olive oil
  • 1 teaspoon lemon peel or zest raw
  • 1 small raw egg whole
  • 2 ounce food cupboard home baking almonds ground by sainsbury's
  • ½ tablespoon thyme, fresh
  • ¼ cup, grated parmesan cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the almonds, Parmesan, thyme leaves, lemon zest, salt and pepper to a mixing bowl. Stir well to combine.
  2. Beat the egg in a bowl.
  3. Dip the pork loin fillets into the beaten egg until well coated.
  4. Dip the pork fillets in the breading and press down gently so that it sticks to the meat.
  5. Heat the oil in a frying pan over a medium-high heat. Add the pork fillets, cooking for 4-5 minutes on each side or until the pork is completely cooked through and the crumb is crisp and golden.
