These chicken breasts are loaded with flavor and texture from tangy Parmesan, aromatic basil, sweet tomatoes and crunchy pine nuts.

Perfect served with a green salad or side of buttered green beans.

Ingredients

  • 4 piece sundried tomatoes packed in oil drained
  • 4 slice – 6" long bacon
  • 2 medium – split chicken breast, skin removed before cooking
  • 2 teaspoon, whole pieces pine nuts
  • 1 tablespoon basil, fresh
  • ¼ cup, grated parmesan cheese
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Finely chop the tomatoes and add to a mixing bowl with the Parmesan, basil, pine nuts and pepper. Mix well to combine.
  3. Slice across the side of the chicken breasts to create a pocket, taking care not to cut all the way through.
  4. Divide the Parmesan mixture evenly between the two chicken breasts, packing the mixture in tightly.
  5. Seal the chicken breasts together and wrap each with two strips of bacon to secure the filling inside.
  6. Transfer to the oven to bake for 23-25 minutes or until completely cooked through and golden brown.
