Meal prep should never be tricky! Simply dice up some succulent Polish sausage, some keto vegetables, and you have an easy, one-pan meal! This recipe fills 3 meal prep containers, or you can double the recipe to make it last the whole week.

Ingredients

  • ½ tablespoon olive oil
  • 8 ounce kielbasa
  • 8 ounce zucchini
  • 4 ounce broccoli, raw
  • ½ tablespoon olive oil
  • ¾ teaspoon salt
  • ½ teaspoon black pepper, ground
  • 1 teaspoon italian seasoning
  • 2 clove garlic

Instructions

  1. Preheat an oven to 375 degrees. Prep a large sheet pan by spraying it and spreading the first amount of oil across it. Slice the kielbasa into thin rounds and arrange them in the center of the pan.
  2. Chop the zucchini and broccoli. In a bowl, combine the veggies with the second amount of olive oil, salt, pepper, and italian seasoning.
  3. Spread the veggies around the sausage in the sheet pan. Crush and place two garlic cloves in the vegetables.
  4. Bake the sheet pan for about 35 minutes, lightly tossing the vegetables half way through. You can enjoy hot or spread out in 3 meal prep containers.
