This slow cooked pork stew is rich with spicy piquante peppers, red onion, celery and aromatic spices.
Perfect served over a bed of cauliflower rice or zucchini noodles.
Ingredients
- 17 ½ ounce pork chops, center loin, fresh, visible fat eaten
- 12 1 pepper sweet & mild piquante pepper
- 2 medium – stalk – 7 1/2" to 8" long celery stalks
- 1 tablespoon tomato paste
- 1 teaspoon oregano, dried
- 1 teaspoon paprika
- 1 small red onion
- 1 tablespoon olive oil
- 1 clove garlic
- ½ cup chicken broth, bouillon or consomme, ready-to-serve can
Instructions
- Heat the olive oil in a skillet over a medium/high heat. Season the pork with a little salt and pepper and add to the pan to brown on all sides. Transfer to a crock pot.
- Roughly chop the celery and finely slice the onion and garlic. Add to the pan with the pork, peppers, stock, tomato purée, oregano and paprika. Mix together to combine.
- Cover and cook on high for four hours or until the pork is completely cooked through.
