This quick and easy chicken recipe is loaded with pizza inspired toppings including oozy mozzarella and salty prosciutto.

The chicken breasts are flattened and topped with pizza ingredients then baked until the mozzarella is melted and the prosciutto is crisp. Perfect served with a green salad or steamed veggies!

Ingredients

  • 2 medium – split chicken breast, skin removed before cooking
  • 2 tablespoon, grated mozzarella cheese
  • 2 slice prosciutto
  • 1 tablespoon tomato paste
  • 1 tablespoon basil, fresh
  • ½ teaspoon oregano, dried
  • ½ tablespoon olive oil
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness – roughly 1/2 an inch.
  3. Divide the tomato paste between the two chicken breasts, spreading evenly across the surface of each.
  4. Sprinkle over the dried oregano and scatter over the grated mozzarella. Roughly tear the prosciutto and arrange over the chicken.
  5. Season with salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes or until the chicken is completely cooked through, the cheese has melted and the ham has crisped.
  6. Scatter with fresh basil to serve.
