This is the perfect dinner to rustle up midweek when you are short of time.

Quick frying chicken portions and easy cook veg is key in this simple yet tasty stir fry.

The meal serves 2 as a generous dinner helping or would comfortably serve 4 alongside a portion of cauliflower rice.

Ingredients

  • 1 pound chicken breast
  • 10 ounce brocollini
  • 3 cup spinach
  • 2 medium (4-1/8 in. long) scallions
  • 2 tablespoon olive oil
  • 1 tablespoon tamari sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger
  • 1 tablespoon sesame seeds
  • ½ lime yields lime juice raw
  • 1 ¼ cup cilantro
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a large wok or frying pan over a medium/high heat and slice the chicken breasts into thick strips.
  2. Add the chicken pieces to the pan and fry until cooked through and lightly browned all over.
  3. Whilst the chicken is cooking, add the tamari sauce to a small mixing bowl with the lime juice and sesame oil. Finely chop the ginger and add this to the liquid also.
  4. Cut the thick ends from the broccoli leaving only 2 inch pieces and finely slice the scallions. Add them to the pan along with the chicken and fry for just a minute or two to soften.
  5. Pour the sauce into the pan and continue to cook for a further minute or two until the sauce has reduced and there is only a little liquid remaining.
  6. Add the spinach to the pan and stir through allowing it to just wilt then remove the pan from the heat.
  7. Sprinkle with sesame seeds and fresh cilantro to serve.
