Ingredients

  • 300 g beef steak, sirloin, no visible fat eaten
  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon lime juice, canned, bottled or boxed
  • 1 clove garlic
  • ½ teaspoon cumin, seed
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ¼ small onion
  • ½ medium – 2 1/2" diameter x 2 3/4" pepper
  • ¼ medium – 2 1/2" diameter x 2 3/4" red pepper
  • ¼ teaspoon oregano, ground
  • ¼ teaspoon paprika
  • ½ each avocado

Instructions

  1. Cut the steak into thin slices and add to a bowl. Crush the garlic and add it to the steak. Mix in 2 tbsp of olive oil, lime juice, cumin powder, chili powder, and ½ tsp salt. Cover the bowl with plastic wrap, and place it in the fridge for 30 minutes.
  2. Preheat oven to 425 degrees Fahrenheit. Slice the onion, green bell pepper, and red bell pepper and add them to a bowl. Drizzle 1 tbsp of olive oil, and mix in oregano, paprika, 1/2 tsp salt, and ¼ tsp black pepper. Set aside.
  3. Take the steak bowl out of the fridge. Cut out two 12”x12” pieces of foil. Portion out the peppers mixture and arrange it in the center of each foil sheet.
  4. Remove steak from marinade and arrange over the vegetables inside the foil packs. Wrap the foil tightly around the steak and veggies. Bake for 6-8 minutes.
  5. Add sliced avocado, fresh cilantro, and lime wedges to the center of each portion. Serve immediately.
