This quick and easy keto spaghetti is packed with tender pork, aromatic herbs, sweet onion and zucchini ribbons.

This makes a great quick and easy dinner option for weeknights.

Ingredients

  • 9 ounce ground pork
  • 1 ½ ounce mozzarella cheese
  • 1 tablespoon basil, fresh
  • 1 tablespoon olive oil
  • 1 medium zucchini
  • 1 tablespoon tomato paste
  • 1 clove garlic
  • 1 teaspoon italian seasoning
  • ½ small white onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Add the pork, cooking until browned all over. Thinly slice the onion and garlic and add to the skillet, cooking for a minute or two more to soften.
  2. Add the tomato paste, Italian seasoning, salt and pepper. Stir well to combine and cook through for 2-3 minutes more.
  3. Whilst the meat cooks, peel the zucchini discarding the skin. Peel the flesh into long wide ribbons then add to the skillet and stir well to combine. Cook for a minute until tender.
  4. Tear in the mozzarella and basil leaves and stir through to melt the cheese. Serve hot.
