This low carb bake is inspired by a classic king ranch recipe. Layers of tender vegetables, cooked chicken and grated cheese are baked until golden – perfect for families and sharing!

This bake is perfect served alongside a green salad or spicy green beans.

Ingredients

  • 17 ½ ounce rotisserie chicken
  • 2 tablespoon cilantro
  • 2 tablespoon olive oil
  • 2 medium mushrooms
  • 1 ⅓ cup, grated cheddar cheese
  • 1 clove garlic
  • 1 teaspoon spices coriander seed or ground
  • 1 teaspoon cumin, ground
  • 1 teaspoon chili powder
  • 1 cup tomato, canned
  • ½ medium – 2 1/2" diameter red onion
  • ½ small red bell peppers, raw
  • ½ small green bell peppers, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Finely dice the onion and peppers, slice the mushrooms and mince the garlic. Heat the olive oil in a large pan over a medium heat and add the onion, peppers and mushrooms, sweating until tender. Add the garlic and stir well, cooking until fragrant.
  3. Add the tomatoes, spices and a good pinch of salt and pepper. Stir well to combine and bring to a simmer for a few minutes to heat through.
  4. Spoon half of the vegetable mixture into an oven proof dish. Shred half the chicken and scatter.
  5. Top the chicken with half of the grated cheese.
  6. Repeat the process with another layer of vegetable mixture, the remaining chicken (shredded) and a final layer of cheese.
  7. Transfer to the oven to bake for 18-20 minutes until the sauce is bubbling, the chicken is cooked through and the cheese is melted and golden.
